Cuban Chop Chop

When you move to a new city, it is only natural that there are going to be some things that you miss from your prior home. Moving to Boston was by far one of the best decisions I have made in the past few years; nevertheless, the food in Miami is one of the things I miss most from home. My go-to meal was from a local chain called Chicken Kitchen.

Chicken Kitchen is known for it’s “Chop Chop” Bowls which consist of yellow rice and diced chicken. You can also add on items to the chop chop. My favorite is the Cuban Chop Chop: freshly grilled chopped breast w/ lettuce, tomatoes, and black beans served over yellow rice.

I took it upon myself to make this favorite of mine on my own. All I needed was some cut up chicken breast, black beans, diced tomatoes and shredded lettuce. The last piece to this puzzle was the Yellow Mustard Curry sauce to make it true to the original. Luckily, I found a recipe online and the rest was history!

      Thanks! It really is and it came out soooo good. The sauce is tricky depending on what flavor you want – we added a bit more curry and mustard to give it more zing!
